Fish Italiano
Growing up in the panhandle of Florida, fish was a regular item for dinner. We used to go to this little restaurant in the back woods. Hard to find, it had the best seafood anywhere. I found this little gem of a fish recipe last year and have served it several times since then. The kids LOVE this recipe!
1/3 cup Kraft fat-free mayonnaise
1/4 cup (3/4 oz.) grated Kraft fat-free Parmesan cheese
2 Tablespoons skim milk
1 teaspoon Italian seasoning
16 ounces white fish, cut into 4 pieces
1/3 cup (1 1/2 ounces) shredded Kraft reduced-fat mozzarella cheese
1. Heat oven 375 degrees F.
2. Spray an 8×8 inch baking dish with butter-flavored cooking spray.
3. In a medium bowl, combine mayonnaise, Parmesan cheese, skim milk, and Italian seasoning.
4. Rinse fish and pat dry.
5. Evenly arrange fish in prepared baking dish.
6. Spread mayonnaise mixture evenly over fish pieces.
7. Evenly sprinkle mozzarella cheese over top.
8. Bake for 15 to 20 minutes or until fish flakes easily.
9. Divide into 4 servings.
NOTES:
Being the cheese loving family that we are, I used WAAAAAY more shredded cheese than is called for in the recipe. Otherwise, this recipe is *perfect* exactly as is.

Kate, it is a fool-proof recipe. It comes out perfect everytime I cook it!
