Peanut Butter Cookies


1 1/2 cups all-purpose flour
1/3 cup sugar
1 1/2 teaspoons baking powder
2 tablespoons + 2 teaspoons vegetable oil
3/4 cup water
3/4 cup creamy peanut butter
1 tablespoons vanilla extract
1 egg

1. Preheat oven to 375 degrees.
2. In a medium bowl, combine flour, sugar, and baking powder.
3. Add oil, water, peanut butter, vanilla extract.
4. Mix well to combine.
5. Shape into approximately 48 (1-inch) balls.
6. Place balls on ungreased baking sheets and flatten with a fork.
7. Bake for 12 minutes.
8. Place cookies on a wire rack and allow to cool.

HINT: Be careful not to overbake these, or they’ll be too hard.

NOTES:
I was looking for a treat to give my family one day and had very little ingredients on hand and no money to go grocery shopping. I came across this one and found it very easy to make. I’ve adapted it from the original recipe to give it a bit more moisture, flavor, and sweetness. The original cookies came out dry and blah. Otherwise, this recipe is fool proof!
