Easy Beef Enchiladas
1 lb. Ground beef
1 (19-oz.) can Old El Paso Enchilada Sauce
6 oz. (1 1/2 cups) shredded cheese
1 (12 count) package flour tortillas for soft tacos
1. Heat oven 375 degrees F.
2. Brown ground beef over medium-heat until throughly cooked. Drain.
3. Stir in 3/4 cup enchilada sauce and 1 cup cheese.
4. Spoon enchilada filling onto tortillas; roll up and place seam-side down in lightly greased 13×9x2-inch baking dish.
5. Pour remaining enchilada sauce over top; sprinkle with remaining cheese.
6. Bake at 375 degrees F for 15-20 minutes.

NOTES:
Again, being the cheese loving family that we are, I used WAY more shredded cheese than is called for in the recipe. We used medium enchilada sauce. DD thought it a bit spicy but ate it.
This recipe also freezes well for later eating!
